Fabulously Healthy Almond Butter Wraps That Will Make You Slap Your Mama

Back in the day, I loved some peanut butter and jelly sandwiches.

(Love in this case meaning obsessed.)

I used to enjoy PB&J with any type of jelly that we had available in the house. Strawberry, grape, orange marmalade…and peanut butter…on whatever bread we were able to bring in. Sheer heaven.

I used to really enjoy my sandwiches toasted. Yes, I was a bougie girl at 6, 7, 8 years old – LOL. The gooey texture of the peanut butter blended with the fruity flavored jelly was SO good together.

When I became an adult, I honestly thought that PB&J was out of the picture for me. In my mind, this was a “kid meal”, so I could not eat it any longer. I didn’t realize that I was trying so hard to be an adult that I was giving up those things that truly made me happy.

So when a friend of mine had a bridal shower where she served “upscale” peanut butter and jelly sandwiches (crusts off and quartered), well, let’s just say I was extremely excited. (And I will neither confirm nor deny that some of those babies went home with me.)

Now that I eat more almond butter and less regular white bread, I have been working on ways to bring back the deliciousness of one of my favorite sandwiches.

I think I have found a way – using a sandwich wrap,  almond butter, bananas, and heat.

Simple, full of flavor, full of health.

(And no slapping of family members is required.)

Almond Butter Wraps

  • 1 whole wheat tortilla (the 6 inch size will do) or a whole wheat FlatOut
  • 2 Tablespoons almond butter
  • 1 banana

Warm tortilla in skillet over medium heat for about 30 seconds. Remove from heat. Add almond butter across entire tortilla, then slice and arrange bananas across the almond butter. Fold in edges of tortilla and roll up to end. Place wrap back in skillet and heat for another 30 seconds to make the almond butter melt just a bit. Cut in half and enjoy with a cup of your favorite berries.
