Raiding the Pantry: Clarissa’s Chicken and Orzo Soup Recipe

In my “Friday Meal Planning Tips” that I post to Facebook, I have asked the question “What is in your pantry?” This weekend, I actually had the opportunity to bless someone with a meal made straight from my pantry and fridge.

All of this came from the fridge, freezer, & pantry!

My mama called me this past Saturday to tell me she was feeling woozy. She did not know why at first, but when I asked her “What did you eat”, she told me that she did not have dinner on Friday night because she did not feel hungry. She ate some rice cakes and hummus around 16:00, and that was it until she got up at 7:20 that morning. I asked if I needed to come over to feed her, and she told me not to worry about it. She asked if I knew of anything she could eat (like ready to go meals or snacks) that would add more nutrients to her body. All she had to say was that to her child who EXCELS at healthy meal making!

I went to work and put together a few meal plans that she could do to have some healthy and ready to eat options for her freezer. I did not have enough meal containers to actually work on getting items ready, but Amazon helped to add some more containers so I can fix up food options.

On Sunday, my husband and I slept in and watched church service on Facebook Live. I started thinking that I needed to bring my mama something before we went on our grocery run that afternoon. I found some orzo pasta in the pantry, some bone broth concentrate in the refrigerator, one piece of chicken and some frozen veggies. Of course I keep spices of all types in the spice rack cabinet. I made a beautiful and healthy chicken and orzo soup for her to have (quick to heat and eat).

Now it’s time to share this recipe with YOU – just to show you that you can raid your own pantry and make healthy meals with the staples and the extras you have laying around.

Ingredients:

0.75 cup Barilla orzo pasta

4 cups boiling water, divided

10 teaspoons bone broth concentrate

2 cloves minced garlic

2 Tablespoons lemon juice

1 boneless and skinless chicken breast

1.5 Tablespoon FlavorGod Lemon Garlic seasoning

0.5 cups Pictsweet Farms frozen seasoning mix

0.5 cups frozen whole kernel corn

1 Tablespoon dried chives

1 Tablespoon dried thyme

Directions:

Preheat oven to 375 degrees. Sprinkle chicken with FlavorGod seasoning and bake for about 30 minutes or until chicken is no longer pink inside. While the chicken is baking, bring 1.5 cups of water to a boil in a small saucepan. Add orzo and continue to boil for 6 minutes. Drain and set aside. In a medium saucepan, combine the remaining 2.5 cups of water with the bone broth concentrate and bring to a boil. Add garlic, lemon juice, seasoning mix, corn, thyme, and chives and stir to combine. Reduce heat to low. Remove chicken from oven and chop into bite sized pieces. Add chicken and orzo to broth mixture and stir to combine. Simmer on low heat for 20 minutes, stirring occasionally. Makes 4 one cup servings.
