Health on the Stealth: “Snowed In” Chicken Parmesan Sliders

I’m from Alabama.

Alabama doesn’t get snow that often, and when we do, we have to shut down all the non-essential places or we will have a “Snow-pocalypse” situation like we did in 2014. (I have a story about that, but that is another blog for another day.)

Anyway, we were scheduled to have snow on December 8, 2017. The weather guys were not really sure how much snow we would get – their forecasts called for anywhere from 1/2 inch all the way up to 3 inches in elevated areas.


…we ended up with 5 inches total. For most places in the US who are used to multiple feet of snow, this is a drop in the bucket. For us in the southeastern part of the country, that is shutdown time.

Luckily, I don’t listen to the meteorologists and I went to the store like we would be stuck at home for a couple of days. One of the meals that I got the ingredients for was Chicken Parmesan Sliders. If you don’t know what a slider is, it is a smaller version of a regular sandwich. They come mostly as hamburgers, but they can be made as Philly cheesesteaks, Chicken Parmesan sandwiches, buffalo chicken sandwiches, Cuban sandwiches, ham and cheddar, and many more. We love eating sliders from time to time, and the cold weather outside made these warm sliders the perfect meal for being snowed in.

So how did I slide in a bit of “Health on the Stealth” with this dish?

  • I used organic chicken.
  • I used whole wheat Panko and flaxseed for a bit of crunch.
  • I added a shallot and used a chunky marinara sauce.

Yes, I served this with French fries but it turned out so delicious.

On to the recipe….


“Snowed In” Chicken Parmesan Sliders

Servings: 6 (2 rolls per serving)

“Snowed In” Chicken Parmesan Sliders


  • 2 large chicken breast halves
  • 4 cloves garlic, chopped and divided
  • 2.5 cups chunky marinara sauce
  • 0.5 cups whole wheat Panko bread crumbs
  • 2 Tablespoons ground flaxseed meal
  • 2 Tablespoons Italian seasoning
  • 0.5 teaspoons salt
  • 1 teaspoon black pepper
  • 6 slices provolone cheese
  • 1 cup shredded Parmesan cheese
  • 12 Hawaiian dinner rolls


  1. Preheat oven to 400 degrees.
  2. Dress chicken with salt, pepper, and one Tablespoon of Italian seasoning.
  3. Place in small baking dish and bake for 45 minutes or until juices run clear.
  4. Cut rolls horizontally and set the top of the rolls to the side.
  5. Take part of the garlic and sprinkle across the bottom layer of the rolls.
  6. Chop chicken into bite sized pieces and place on top of the rolls.
  7. Spread marinara sauce over the top of the chicken, making sure there is even coverage over the chicken.
  8. Mix bread crumbs and flaxseed in a small bowl and sprinkle across the sauce.
  9. Cover with Parmesan cheese, then layer provolone cheese on top.
  10. Cover with the top layer of the rolls.
  11. Melt butter in the microwave, then mix the remaining garlic cloves and Italian seasoning.
  12. Pour over top of rolls.
  13. Cover with foil and place in the oven.
  14. Bake covered for 25 minutes, then remove foil and bake an additional 5 minutes until tops are golden brown. Remove from oven and serve.
