Creating Healthy Meals: Garlic Lime Chicken

My slow cooker gets really good use – every month of the year.

I honestly don’t know where I would be without the slow cooker – setting meals up to cook while I am sleeping, or getting everything in the cooker on weekend morning before church or running errands. And when I wake up (or return from wherever), the meal is pretty much done – just need to add side dishes.

Today, I found a really tasty recipe in my crockpot cookbook – Garlic Lime Chicken. The original recipe was made by Loretta Krahn from Mountain Lake, Minnesota. I did follow the recipe as it was printed except for two parts:

  • I substituted liquid aminos for the soy sauce to add extra nutrition to the chicken.
  • I had some leftover jalapeños that I wanted to use up, so I removed the seeds, chopped them small, and added them to the recipe as well.

Slow Cooker Garlic Lime Chicken

Category: Entree

Yield: About 8

Serving Size: 1 cup

Ingredients

  • 6 boneless skinless chicken breast halves
  • 3/4 cup Bragg liquid aminos
  • Juice of 3 - 4 limes, depending on your taste preference
  • 1.5 Tablespoons Worcestershire sauce
  • 3 garlic cloves, minced
  • 2 jalapeño peppers, seeded and diced
  • 3/4 teaspoon dry ground mustard
  • 1/2 teaspoon fresh ground pepper

Instructions

  1. Place chicken in slow cooker.
  2. Mix remaining ingredients and pour over the chicken.
  3. Cover and cook on High 4-6 hours or Low 6-8 hours.
  4. After chicken is done, use tines of fork to shred up all the chicken.
