Creating Healthy Meals: Garlic Lime Chicken

My slow cooker gets really good use – every month of the year.

I honestly don’t know where I would be without the slow cooker – setting meals up to cook while I am sleeping, or getting everything in the cooker on weekend morning before church or running errands. And when I wake up (or return from wherever), the meal is pretty much done – just need to add side dishes.

Today, I found a really tasty recipe in my crockpot cookbook – Garlic Lime Chicken. The original recipe was made by Loretta Krahn from Mountain Lake, Minnesota. I did follow the recipe as it was printed except for two parts:

  • I substituted liquid aminos for the soy sauce to add extra nutrition to the chicken.
  • I had some leftover jalapeƱos that I wanted to use up, so I removed the seeds, chopped them small, and added them to the recipe as well.

I hope you enjoy this as much as we are for dinner all week!
