Breakfast On The Go: Overnight Oats

Mornings.

 

You are just arriving home from your night shift work, while your family is up and about getting ready for school and for work. There’s not a whole lot of time to spend cooking breakfast to provide a hearty start to their day. Especially on those days when you just want to fall into that comfy bed after your shift is done.

 

But…what you can do is whip up a batch of Overnight Oats on your way out the door to your night shift.

 

What are overnight oats?

 

It is all the raw ingredients for oatmeal, mixed up and waiting overnight for someone to eat the next morning. It can be heated on the stove or in the microwave when you are ready to eat, or it can be eaten cold if you don’t have a way to warm it up. All you really need to do is mix these in a small jar or in a transport container, and place it into the refrigerator overnight.

 

Simple.

No fuss.

Nutritious.

 

There are so many delicious options of overnight oats that you can create. Here are some of my personal favorites:

 

  • 1/2 cup rolled oats, 1/2 cup almond milk, 2 Tablespoons fresh strawberries, and 2 Tablespoons fresh blueberries
  • 1/2 cup rolled oats, 1/2 cup water, 1 teaspoon cashew butter, 1 teaspoon chia seeds, ¬†and 1 teaspoon cacao powder
  • 1/2 cup rolled oats, 1/2 cup almond milk, 2 Tablespoons crushed pineapple (drained of juice), 1 teaspoon shredded coconut
  • 1/2 cup rolled oats, 1/2 cup coconut milk, 1/4 cup chopped mango, 1 teaspoon shredded coconut
  • 1/2 cup rolled oats, 1/2 cup water, 1 teaspoon pecan butter, 1 teaspoon dried cranberries, and 1 teaspoon chia seeds
